Vegetable-Chicken-Pan with mashed potatoes

a quick recipe for the whole family / perfect leftover dinner

Zutaten

  • 400 g chicken breast
  • 1 can corn
  • 1 can kidney beans
  • 1/2 can tomato pieces
  • 350 g frozen brokkoli
  • 1/2 pck heavy cream
  • 4 tbsp cream cheese (herb)
  • mashed potatoes (or noodles or rice)
  • 3 tbsp cress
  • salt & pepper

Anleitungen

  • Steam the frozen brokkoli in a little water and remove from pan. Drain the water. Season the chicken with a little salt and pepper and fry in some oil in the same pan from both sides. Set aside.
  • Heat cream and cream cheese and loosen any burned chicken pieces in the pan. This gives the sauce extra flavor. Season with salt & pepper. Add chicken pieces, corn, kidney beans, tomatoes and brokkoli and stir. Simmer until chicken is fully cooked through and sauce has desired consistency.
  • Serve the sauce with some chicken and vegetables over the mashed potatoes and sprincle with fresh cress.
