Vegetable-Chicken-Pan with mashed potatoes
a quick recipe for the whole family / perfect leftover dinner
Portionen: 4 servings
- 400 g chicken breast
- 1 can corn
- 1 can kidney beans
- 1/2 can tomato pieces
- 350 g frozen brokkoli
- 1/2 pck heavy cream
- 4 tbsp cream cheese (herb)
- mashed potatoes (or noodles or rice)
- 3 tbsp cress
- salt & pepper
Steam the frozen brokkoli in a little water and remove from pan. Drain the water. Season the chicken with a little salt and pepper and fry in some oil in the same pan from both sides. Set aside.
Heat cream and cream cheese and loosen any burned chicken pieces in the pan. This gives the sauce extra flavor. Season with salt & pepper. Add chicken pieces, corn, kidney beans, tomatoes and brokkoli and stir. Simmer until chicken is fully cooked through and sauce has desired consistency.
Serve the sauce with some chicken and vegetables over the mashed potatoes and sprincle with fresh cress.
